I'm not much of a cook, and not too fond of meat which means of course that I love carbs!  Not good when trying to loose and/or control weight.  Also I'm not much of a cook, but I have discovered ROASTED vegetables and fruit salad. 

Pile fresh veg onto a large cooking tray, like a jelly roll pan use alum. foil sprayed with nonfat cooking spray or parchment  drizzle with olive oil and a little salt (optional) and roast at 450 for 30 min.  Today I'm doing carrotts, parsnips, turnip, onion and even threw in some tomatoes.  Last week it was just onion (always) broccolli and cauliflower.

Any fruit, any porportion, some canned are fine.  I especially like the mandarin oranges.  This week it's tri-color grapes.  My dressing is equal parts lime juice and local honey.  I add walnuts and if I have it blue cheese.

I use meat from the deli.

Fee, if you are reading, how are you doing with the weight.  I have been concerned for you.  As I may have mentioned I lost 30 pounds, but I was sick for a long time to do it. It's hard to keep it off.  Now if I gave up by evening wine it would be easier.  But red is good for you, right?  I have joined the Silver Sneakers program now and am feeling very good.

Has anybondy read '' Animal, Vegetable, Miracle'' by Barbara Kingsolver. It tells how she moved to Kentucky and grew all her own food. I haven't read it but intend to.

MM, that sounds so good! I love roasted veggies and could have them every night. I was telling Mr. Roxie earlier I wish we had some broccoli for dinner tonight. We have veggies a lot on the grill and they're great. I like grilled zucchini or squash, cut lengthways drizzled with OO and seasoned salt. The grill marks seem to make them better for some reason. Sometimes we just throw in all kinds of veggies in aluminum foil and put on the grill. My problem is that I always want tons of butter on them! Congrats on your weight loss. That is great! And yeah, that red wine is good for you!!

    Had roasted veggies this very night along with a chicken.  I put in onions, carrots, acorn squash and parsnips. Yum. All carmelized and crunchy nutty toasty soft!  Another great thing to roast is brussel sprouts. They're great drizzled with olive oil, tossed with minced garlic and then topped with some shredded parmesan. You forget they're brussel sprouts!

  • Tosca, what did you put on your roasted veggies to make them caramelized and crunchy nutty toasty soft? What temp did you use and how long? Sounds delicious. /Sammie

    MM, my mouth is watering just reading your post. I often wrap veggies in aluminum foil (drizzle with olive oil like you and add a dash of seasoned salt). I put this in the oven or on the grill. Lately I have been sauteing cut up zucchini as it is very plentiful in the markets right now.

  • Also want to add that I fight the weight battle all the time. I usually walk for about half an hour every day, but was out of town for a while and then didn't feel like going when I got back. I did walk today and plan to do so regularly from now on./mm
