Topic: Does anyone have a good recipe for Chili?

I have made Chili ONCE in my life and it came out horrible.  I don't know what I did wrong, but I'm too scared to try it again (I forget where I got the recipe or even if I used one).

Does anyone have a good recipe for Chili?  Thank you!

Here is a Wendy's copycat recipe and a KFC Coleslaw recipe to serve with it. Everyone loves both.

Wendy's Chili recipe

Ingredients :


Preparation and Cooking Instructions :

  1. Brown the ground beef in a skillet over medium heat; drain off the fat.
  2. Using a fork, crumble the cooked beef into pea-size pieces.
  3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.
  4. Cook, stirring every 15 minutes, for 2 to 3 hours.

Coleslaw KFC Style Recipe

INGREDIENTS:

1 small cabbage- finely diced
1/4 cup carrot - finely diced
2 tablespoons minced white onion
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup Miracle Whip mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons tarragon vinegar (can use white wine)
2 1/2 tablespoons lemon juice

METHOD:

Make sure your cabbage, carrot and onion are finely diced then place in a large bowl.
Blend remaining ingredients until smooth then pour over the cabbage and mix well.
Cover bowl with cling wrap and refridgerate for several hours or overnight, which is best.
This amount will serve at least 10 people.

  • Someone who used to work at Wendys told me they used leftover hamburgers for the ground beef--but he worked there about 15 years ago, so don't know if they could still do that with health codes and all. vh
  • My husband knew someone whose son worked at Taco Belle and he told his mom never to eat there. We could start a whole topic about fast food.

    I have lots of good recipes some even from prisons.  Then there's Cincinnatti Chili which may just appeal to you.  I just got home from working so I will dig them out after I rest a little.

  • I like Wendy's Chili. I don't taste cumin in there and it doesn't have gabanzo beans. But I want to make my own, a large pot of it so when I have company, I can serve it to them.

    I usually go the easy way with chili.  I think it was Hunts that used to have tomatoes already seasoned for chili and all you had to do was add your ground beef and kidney beans if you wanted them.  It was really good but I haven't been able to find them this year :-(  It's funny that you mentioned chili though because I was thinking of asking for white chili recipes.  I've never had it but it sounds so good.

    Here is a recipe that one of the gals made at my quilt retreat. It is vegetarian chili and quite good. Spicey so if you like it milder omit or cut back on the spices.


    Chili Non-Carne



    ¾ cup chopped onion 1 cup mild picante sauce
    2 garlic cloves, minced 1 (15 oz.) can garbanzo beans
    3 tablespoons olive oil 2 (15 oz.) cans kidney beans,
    2 tablespoons chili powder 1 drained, 1 undrained
    ¼ teaspoon basil ½ bunch fresh cilantro
    ¼ teaspoon crushed oregano Chopped onion, bell pepper
    ¼ teaspoon cumin seed and tomato and unsalted
    ¼ thyme tortilla chips for garnish
    2 cups chopped zucchini
    1 cup finely chopped carrots
    1 (28 oz.) can tomatoes, drained and chopped
    In large pot, sauté onion and garlic in olive oil until soft. Add chili powder, basil, oregano, cumin seed and thyme. Add zucchini and carrots; stir well. Cook over low heat 2 minutes, stirring occasionally. Stir in tomatoes, picante sauce, garbanzos and drained and undrained beans. Add cilantro. Bring to a boil, stirring frequently.
    Reduce heat and simmer uncovered 40 minutes or until thick. Top with chopped onion, bell pepper, tomato and chips.
    Makes 8 servings.
    Note: Cut preparation time by chopping onion, garlic, tomato and zucchini in food processor.

  • I am laughing because I don't like half of the ingredients in this recipe, but I want to thank you from the bottom of my heart for typing it in....what are garbanzo beans? I don't like cumin, does all chili have to have cumin? You are very kind to type it in here....I may use a variation of this and use this as my base. Thank you again (((huggss))).
  • chick peas and garbonzoes are the same thing. And I am not overly fond of cumin either so reduce it. I didn't type it just copied and pasted! eom CG

LOL  My son won awards for his Chilli.  He's on his way over.  I'll ask him for his receipe.  Do you like heat in your Chilli or not?  Are you trying to jump-start your mother? LOL.
